History

India boasts of a diverse cuisine, whose seeds lies well within its historical past, different religions and distinctive geography. While some Indian foods have flavours borrowed from the cuisine enjoyed by its foreign invaders, the others bear a close connection to the specific tastes of inhabitants of different regions.

Even the food savoured by the Hindus and Muslims of India are remarkably different from each other. Thus Indian food has been evolving since ancient times, and the process continues today, with the advent of western culture in the country.

Several ingredients, once alien to the people of India, have now made their way into Indian kitchens, while newer culinary methods from other parts of the world have had a huge impact on Indian cuisine.

Breads, pastas, noodles and cakes, are now equally popular among the natives, just like any other Indian dishes; though you will often find traditional flavours infused in those delicacies to make them suitable to the Indian palate.

Indian curries are often cooked with veggies like bell peppers, zucchini, and broccoli, as well as fruits - like strawberries, apricot, and cherries, which are now used in authentic desserts, thus giving rise to a delectable outcome of Indo-western fusion.

Nevertheless, in spite of such western influences, Indians are still true to their roots, and this has helped Indian cuisine to flourish and become more apt for modernist India.

SAMPLE RECIPE

 Roasted Chicken Indian Style
(Tandoori Chicken)

If Italy has pizza to brag about, India has Tandoori Chicken. If you are tempted to make chicken Indian style, try out the Tandoori Chicken, and you won't regret your decision!

Tandoori chicken gets its name from the word etandoorf, a large clay oven, where the marinated chicken is traditionally roasted to perfection. However, it's hard to find a tandoor in urban kitchens, and the modern version of tandoori chicken is grilled in a BBQ oven, or microwave without compromising much with the flavours.

Though an Indian favourite, tandoori chicken has its roots in the city of Peshawar, Pakistan and slowly imbibed into the Indian culture to became a part of its cuisine. Now, if history bores you, a plate full of tandoori chicken definitely won't!

The large chunks of chicken in vibrant red, or orange colour turn it into a drool-worthy of your visual senses, thanks to the kashmiri red, chilli and turmeric powder. But don't let the fiery colours fool you, because every bite of tandoori chicken will be welcomed by your taste buds (very mild heat), though you can't ignore the subtle flavours of spices coating its crisp, charred skin.

This strikes a pleasant contrast to the juicy flesh inside, and turns it into an appetiser to die for. A splash of lemon on top brings out the best in this roasted chicken and makes it an excellent choice as a (appetiser) starter.

In case, you wish to turn it into a finger food, simply use small chunks of chicken while keeping the rest of the recipe the same, and you are set to rock the party!

Tandoori Chicken

Ingredients

* 4 large chicken pieces, skinned and the fat trimmed off
* A small splodge of butter

For the marinade:

* 1 tablespoon of ginger-garlic paste
* cup plain yoghurt
* 1 tablespoon of minced garlic
* 1 inch of ginger, peeled and grated
* teaspoon of (freshly ground) black pepper
* teaspoon of cayenne pepper or red chilli powder
* teaspoon of ground cloves
* 1 teaspoon of ground coriander seeds
* teaspoon of ground green cardamom seeds
* 1 tablespoon of (ground) cumin
* 2 teaspoons of salt
* Vegetable oil
* A handful of cilantro leaves, torn roughly by hand

Method

  • Poke the chicken with a fork, and cut slits through its flesh with a sharp knife.

  • Whisk the yoghurt with garlic, ginger, spices, salt and black pepper and pour it all over the chicken pieces.

  • Flip the chicken a couple of times, to coat them thoroughly with the marinade, & then refrigerate them for a couple of hours.

  • In case, you want to grill the chicken, place the pre-greased grill rack and preheat over a moderate fire.

  • Place the chicken over the hot grill, and baste it with some oil.

  • Grill them for about 45 minutes, flipping them over at times and check the doneness by inserting a fork through it.

  • If you want to roast the chicken in an oven, preheat the latter to 450 degrees Fah and arrange the chicken pieces in a pre-greased roasting pan.

  • Brush them with a lashing of oil, and roast them for about half an hour, or until its juices run clear.

  • Serve warm with lemon wedges by its side.
